Amylases are essential enzymes that break down internal glycosidic linkages in starch to create dextrins and oligosaccharides as their main byproducts. Based on their three-dimensional structures, reaction mechanisms, and amino acid sequences, amylases are divided into three categories: -amylase, -amylase, and glucoamylase. Amylases are used in a wide range of industries including the food, detergent, textile, brewing, and distilling as well as in clinical, medical, and analytical chemistry.
